  • 7 eggs (or 1¾ cup of egg whites or egg substitute., I like to use more egg whites for a much healthier version of 1¾ cup of liquid egg white and 1-2 whole eggs)
  • 8 ounces baby bella mushrooms (sliced or diced small)
  • 1/4 cup red bell pepper (finely diced, optional)
  • 1/4 cup diced onion (finely, optional)
  • 1/4 cup shredded cheese (your choice, optional I love a little feta sometimes.)
