- 150 grams fresh spinach
- 1 onion (medium, chopped)
- 1 garlic clove (finely chopped)
- 1/2 celery stalk (finely chopped)
- 1 bay leaf
- 2 Tbsp. olive oil (plus 2 more for the croutons)
- 5 cups hot water (approx. 1l and 250 ml)
- 1 coarse sea salt (level teaspoon, plus fine salt for seasoning the croutons, pepper to taste)
- 2 slices bread (any, slightly stale works well, cut into cubes)
