- 5 oz. baby spinach (fresh, see recipe note if you want to use frozen spinach)
- 3/4 cup crumbled feta cheese

- 1 cup whole milk (can use half-and-half or heavy cream or a combination)
- 1 Tbsp. all purpose flour
- 1/4 cup grated Parmesan
- 1/2 tsp. salt
- fresh ground black pepper (to taste)

Delicious. I didn't have feta or swiss so I substituted some different cheeses but overall it was delicious.

My quiche took 50 minutes to cook and it was still watery. It was much too salty. If I try this again I will not use feta and I won’t add salt. It because this recipe is too salty.

This quiche is unbelievably good! The combination of ingredients is just perfect. I used heavy cream instead of milk, Pecorino Romano instead of Parmesan, and an Italian blend of cheese instead of Swiss cheese (simply because that's what I had in the house), and it was amaaazing. Highly recommend!
