Everyone seem to love this. I think next time I will cook my carrots just a little. They were crunchy but some people may like the crunchy texture. I did saute my mushrooms in a little olive oil. I didn't have chopped spinach so I had to use fresh baby spinach leaves. I sauteed them also in olive oil. I should have chopped the leaves first though. Next time I will use the frozen chopped spinach. I also made my own alfredo sauce making it a little lighter than jar sauce.

Love this recipe! I changed a few things... used all mushrooms instead of half carrots, and 1% milk, but its a great week night dinner!
