- 2 1/2 cups cremini mushrooms (chopped, 8 ounces or 225 grams)
- 1 garlic clove (minced)
- 12 oz. fresh spinach leaves (340 grams or two 6-ounce bags, rinsed)
- 3/4 tsp. kosher salt (or to taste)
- 2 cups ricotta cheese (425 grams or 15-ounce container, can substitute cottage cheese)
- 2 large eggs (beaten)
- 1/4 tsp. freshly ground black pepper
- 3 cups marinara sauce (680 grams or 24-ounce jar, see our homemade marinara sauce recipe)
- 12 no boil lasagna noodles (or use regular lasagna noodles that have been cooked)
- 1 cup grated Parmesan cheese
- 2 cups shredded mozzarella cheese

I wasn’t sure about no boil pasta but am now a convert. This recipe is easy and delicious and I will definitely make it again. I add more garlic than called for.

Came out very well using my own marinara and using palm heart lasagna noodles.

Fantastic! We didn't miss meat at all. I probably will increase the amount of spinach for the next iteration. I used fresh mozzarella slices instead of grated block mozzarella.
