This was soooo good! I didn't use feta cheese or red pepper flakes, but maybe I'll use them next time. I did season the spinach with accent, onion powder, black pepper. And I had a marinara sauce dip on the side. I didn't do the whole press a pan so the sandwich is like a paninin thing. I just pressed a spatula and wa-lah! I also put some butter in the pan when I had the sandwich all together.

Incredibly simple and delicious!
And I used bread, imagine if I had used ciabatta rolls.

Excelent. Spinach and grilled cheese were an awesome mix. Taste of garlic was also good. Not to mention it was easy to make.

Delicious. Changed the bread so it was more of a sandwich than a traditional grilled cheese. Would make it again!

We used wraps instead of bread and beetroot leaves instead of spinach and did them in the sandwich toaster. Worked out great!

Delicious! The spinach was not bitter at all which is what I was worried about. Definitely keeping this in the rotation.

These were very good. I was out of fresh spinach so I used arugula instead - it was delicious. I substituted flat bread to reduce the carbs.

I'm with Jade: use fresh spinach. Be sure to salt to taste after the spinach has completely wilted. I added salt at the same time as I added the spinach and then realized I had only enough spinach for 2 sandwiches - and had already added salt for 4 sandwiches. So while my sandwiches were a little too salty (my fault for venturing off-recipe), we really, really liked these. Next time, I will add a bit of lemon juice and zest at the end of cooking the spinach. Will definitely make this again.

Tasty vegetarian sandwich. I prefer to use fresh sautéed spinach squeezed of excess water because I find frozen spinach tastes a bit muddy in my opinion.

This was very tasty. I didn't tweak it but I did use the skillet that I cooked the spinach in to toast the sandwiches. It's small, I know but the less dirty dishes the better!!
