- 1 whole flour tortilla (grain, with rolled oats and flax seeds)
- olive oil (or canola spray)
- 2 eggs
- 1 cup fresh spinach
- 1 oz. cheddar (grated lite celtic)
- salt
- pepper

Directions
- Whisk eggs with 1 tbsp. water in a small bowl and set aside
- Spray small frying pan with olive oil or canola spray and heat on medium heat. Add tortilla, heat about one minute just to brown slightly, and crisp one side. Transfer to plate
- Add spinach to pan and cook until it wilts, stirring with a wooden spatula
