- 1/2 cup bell pepper (diced [See Note 1], about 1/2 of a bell pepper, any color)
- 2 garlic cloves (minced, about 2 teaspoons)
- 10 oz. frozen chopped spinach (thawed and thoroughly drained, squoze dry)
- 15 oz. diced tomatoes (drained.)
- 1/4 tsp. smoked paprika ([See Note 2])
- 1/2 tsp. salt (more or less to taste)
- 1/2 tsp. pepper (more or less to taste)
- 1/2 cup mayonnaise ([See Note 3])
- 4 oz. cream cheese (softened [See Note 4])
- 1/2 cup sour cream ([See Note 5])
- 1 cup grated mozzarella (freshly)
- 1/2 cup grated sharp cheddar cheese (freshly)
- 1/2 cup grated Parmesan cheese (freshly, + 1/4 cup more for optional topping [See Step 7].)
