I’ve made this dish with spinach, but I think kale would be better suited to this recipe. Spinach wilts tremendously, while kale holds more of its shape. I think kale can stand up to the Smokey flavour of the bacon and it reduces the bitterness of the greens

It was good.. Don't know what spoon full of fat to add or leave.. But other than that. Super easy. Doesn't quite serve four or maybe I just eat a lot 👐
