- 1 pinch cayenne pepper
- 4 skinless salmon fillets (about 4-5 ounces each)
- 1 1/2 Tbsp. olive oil (plus a drizzle for the baking sheet)
- 4 rolls (soft, crusty rustic, cut in half and toasted)

- 1/4 red onion (thinly sliced)
