  • 1 can pinto beans (rinsed and drained)
  • 2 tablespoons lemon juice (fresh squeezed)
  • 1 tablespoon juice (peperoncini, brine from the bottle of peppers)
  • 1/2 teaspoon tobasco sauce (green, or more if you like it spicy)
  • 1 teaspoon Spike Seasoning (optional but recommended)
  • ground black pepper
  • salt
  • 5 tablespoons extra-virgin olive oil
  • 6 peppers (large peperoncini, stem and seeds removed and finely chopped)
  • 1/4 cup green onion (sliced)
  • 1 cup tomato (chopped, drained if the tomatoes are very juicy, I used cherry tomatoes cut in fourths)
  • 1/2 cup chopped parsley
  • 7 ounces tuna (Italian, packed in olive oil)

    This is great dish. I made it a few days ago and going to make it again b4 the end of the day. Covid 19 has caused a few xtra lbs. This is not fattening ( I did add avocados ) and after it marinades the favors all begin to "pop". I used dark kidney beans low sodium (nxt time black beans, dark kidney was great) , added one big orange bell pepper, an avocado & 5-6 cerignola olives ( you have to add these if you love olives). I found the spike seasoning at Whole foods market, I'd never heard of it b4 and thank God I checked Amazon bc that's how I found out I could pick it up. I had at least 1 1/2 tps of green hot sauce. and a little red tobasco. I also added xtra peperoncini juice and xtra peppers. I love spicy food. I added 2-3 dashes of garlic powder, himalayan salt & ground pepper. I added at least a 1/2cp of green scallions, I knew it would only enhance the favor. I strongly suggest you get a large orange or red bell pepper. Today I'm getting a bigger one. I may consider adding a 1/4 cp or less of cilantro nxt time. ( taste it 1st w/ a smll amt so not to ruin a dish) I used sweet cherry tomatoes. Great recipe. You get about 3-4 servings if your making it a meal as I did w/ a SMALL piece of french baguette roll. This was wonderful. I intend to try a peppered piece of salmon additional or alone nxt time. It "Pops" definitely a winner. Highly suggest this one.
