- 1 onion (large, peeled & diced)
- 2 poblano peppers (diced, use gloves to protect your fingers from the oils)
- 3 tsp. fennel seed (dried)
- 1/2 tsp. crushed red pepper (adjust to your preferred level of spiciness)
- 1 lb. hot Italian sausage (ground)
- 4 cloves garlic (minced)
- 5 large potatoes (peeled and chopped, I prefer gold but russet works, too)
- 4 cups chicken broth
- water (if needed to completely cover potatoes)
- 5 oz. baby spinach (or kale, preferably organic)
- 1 cup heavy cream
- sea salt (to taste, I love THIS salt)
- black pepper (to taste)
- grated Parmesan cheese (optional)
- cooked bacon (optional)
- crusty bread (optional)
- stock (stainless steel, pot or enameled cast-iron French oven)
- vegetable (quality, peeler)
- cheese (grater, if using)

definitely wait until the last hour or so to put the spinach in else it turns green. if you're using kale, you should be good though. Weird looks aside, my boyfriend and I loved this
