- 1 lb. eggplant (cut into 1-inch cubes)

- 2 yellow onions (chopped)
- 3 cloves garlic (minced)
- 2 medium zucchini (chopped)
- 2 red bell peppers (large, cored, seeded, diced)
- 2 jalapeño peppers (seeded, finely minced, Taste and check the heat of the jalapeños. If very hot only use one, if mildly hot, use two. Wash hands with soap and water after handling. Do not rub eyes.)

- 2 Tbsp. oregano (chopped fresh chopped, or 2 teaspoons dried)
- 1 tsp. fennel seeds
- 1 1/2 cups white beans (cooked, 1 15-ounce or 425g can, drained and rinsed)
- 1 1/2 cups kidney beans (cooked, 1 15-ounce or 425g can, drained and rinsed)
- 1 lemon
- 3 Tbsp. lemon juice
- 1 tsp. sugar
- 1/3 cup chopped fresh cilantro (can sub parsley if you have an aversion to cilantro)
- salt
- freshly ground black pepper

I've found this recipe elsewhere before and it's really good. There's some kind of technical problem with this ingredients list in yummly though. If you can find the real recipe on the internet, it's a winner.

First time made the mistake of adding too much lemon... second time I made it was perfect! Freezes great and goes well with a side of cornbread

It turned out really well - I added more jalapeños instead of the chilli powder and doubled up the lime juice and it was fantastic! Definitely making again.

Wonderful! I didn’t use eggplant because we don’t eat it but it didn’t need it. Added some corn and a can of organic tomato sauce;)

Very good. Veryvery tasty. But I may put too much chili. I'm currently residing in Thailand, so I am used to spicy food. But this is there with it. And with only one jalapeño!

This had more chopping than some other chili recipes, but it was worth it. I cooked this right up watching football from the kitchen and adjusted the spices to taste.
