- 2 carrots (or 1 large carrot peeled and finely diced)
- 1/2 red capsicum (/pepper finely diced)
- 150 grams frozen peas
- oil (A light, such as vegetable oil, grape-seed oil or rice bran oil)
- 3 eggs (cracked in a bowl, seasoned with salt and pepper then whisked)
- 1/2 Tbsp. sesame oil
- 2 cloves garlic (finely chopped)
- 1 ginger (thumb sized piece of, peeled and finely chopped)
- 1 tsp. chilli flakes
- 1 1/2 Tbsp. hoisin sauce
- 2 Tbsp. soy sauce
- 1 handful flat-leaf parsley (roughly chopped)

I halved the recipe there are only 2 of us. I prefer fresh made. I didn’t have Chili flakes but had Chili powder and it still turned out. I also substituted the frozen peas with sugar snap peas cut diagonally in half. I will make this again.
