- 14 oz. crushed tomatoes
- 3 cups chicken (shredded)
- 2 cups rice noodles (cooked 3-inch pieces of, cooked according to package directions, or see Note 2)
- 4 cups baby spinach
- 1 Tbsp. fish sauce (or more to taste)
- 1 lime
- 1/2 cup fresh cilantro leaves (roughly chopped, optional, or to serve)
