    So so good, that we're making it again this week! I prefer green thai so we blitzed the paste ingredients (exc the thai paste) then split in half and added red thai paste to half and green thai paste the other half. The red thai paste version was much fuller flavour but both were good. We also added carrot and swede cut into thin strips (as I love my veggies) -so gorgeous! The paste I am going to try as a curry paste without the stock as it is so flavoursome, mmmm - Oh one last thing, we cooked the rice noodles separate so we could add our preferred amount :)

    Amazing!!! Sooo good. I used homemade vegetable stock instead of chicken stock and had to add more salt, pepper, and chili sauce at the end since it wasn't (really) spicy. But after that, delicious! 😋😋
