I love this recipe . Very light and flavorful . I will most definitely make this again soon

I was inspired by this recipe however modified for what was in my pantry: used a mixture of veggies corn, black bean, garbanzo beans, tomato, onion and bell pepper and convect baked for 35-40 min (400 degrees). Served without pasta but with a yoghurt based dipping sauce instead. With an avocado on the side, it was a very satisfying dinner!
