- 1 1/2 cups chickpeas (soaked overnight, then cooked until tender. If using canned, substitute with two 15-oz cans, drained)
- 1 tsp. cumin seeds
- 2 cloves garlic (minced)
- 1 red onion (medium, very thinly sliced)
- 1 green chili pepper (moderately hot, like jalapeno or serrano, cut into very thin slices)
- 1 green bell pepper (cut into thin, ½-inch-long strips)
- 1 Tbsp. vegetable oil (like coconut or avocado)
- 2 Tbsp. tomato ketchup
- 1 Tbsp. tamari (can sub with soy sauce)
- 2 tsp. paprika (you can add a hot sauce instead, like Sriracha)
- 1/2 tsp. turmeric
- 1 Tbsp. chaat masala (available at Indian stores or online, but if you don't have this, you can use the juice of 1 lemon)
- 1 Tbsp. maple syrup
- salt (to taste)
- 2 Tbsp. coriander (finely minced, for garnish, optional)
