- 1 onion (large, chopped)
- 1 large carrot (chopped)
- 3 garlic cloves (minced)
- 1 tsp. crushed red pepper flakes (less or more, to taste)
- 3 sprigs fresh thyme
- 1/2 cup dry white wine
- 4 cups low sodium chicken broth
- 24 oz. roasted red peppers, drained (and chopped, I like the peppers preserved in water, not oil)
- 1 russet potato (peeled and diced)
- 1/2 cup heavy cream (or half-and-half)
- 8 oz. smoked gouda cheese (grated, you can use any smoked hard cheese you like)
