Bring a large pot of salted water to a boil. Add the spaghetti and cook until almost al dente, about 6 minutes. Drain, return to pot, and toss with the oil. Set aside.

Combine the chicken broth, soy sauce, Shaoxing, chili bean sauce, sugar, and cornstarch in a small mixing bowl, whisking well to dissolve the sugar and cornstarch. Set aside.
PRO TIP Shaoxing, a type of cooking wine made from fermented rice, is available at Asian markets and some supermarkets. Dry sherry makes a good substitution.

Discard stems from the shiitakes and slice caps 1/3-inch thick. Slice the bok choy crosswise 1/2-inch thick. Core and cut the red pepper into thin strips. Peel the ginger, then mince ginger and garlic. Remove strings from the snow peas (snap at stem end, then sharply pull the string from the straight side). Thinly slice the snow peas lengthwise. Set vegetables aside.

Heat the oil in a large nonstick skillet over medium-high heat. Add the shrimp and season with the salt and pepper. Cook, stirring often, until pink, curled, and almost white throughout, about 4 minutes. Transfer to a plate.
PRO TIP Buy shrimp already shelled and deveined to save time.

Add shiitakes to the skillet and cook over medium-high heat, without stirring, until browned on the bottom, about 3 minutes. Add the bok choy, red pepper, and ginger and stir-fry until vegetables are tender, about 4 minutes. Add more oil if pan is getting dry, then add the snow peas and garlic and stir-fry until garlic is fragrant, about 2 minutes. Remove from heat.

Give the sauce a stir, then add with the spaghetti and shrimp to the vegetables. Return pan to medium-high heat and simmer, tossing occasionally, until noodles are coated with sauce and piping hot, 3-4 minutes. Transfer to serving bowls.
