- 1 yellow pepper (large, sliced or diced)
- 800 grams tomatoes (tinned, 2 tins)
- 10 cherry tomatoes (halved)
- 1/2 lemon
- 6 free range eggs
- 1/4 cup fresh flat leaf parsley (roughly chopped)
- 1/4 cup fresh mint (roughly chopped)
- 8 Tbsp. coconut yogurt
