  • 16 ounces rice noodles (fresh)
  • 1 tablespoon peanut oil
  • 1 pound ground lamb
  • 3 cloves garlic (crushed)
  • 2 Thai chili peppers (fresh small red, chopped finely)
  • 1 pound bok choy (sliced thinly)
  • 2 tablespoons tamari soy sauce
  • 1 tablespoon fish sauce
  • 2 tablespoons soy sauce
  • 4 spring onions (sliced thinly)
  • 2 ounces thai basil leaves (lightly packed fresh)
  • 1/2 pound beansprouts

    Directions

    1. Place noodles in a medium heatproof bowl and cover with boiling water. Separate gently and drain.
    2. Heat the oil in a wok and stir-fry pork until browned. Add garlic and chili pepper and stir-fry until fragrant. Add noodles, bok choy and sauces and stir-fry until bok choy just wilts. Remove from heat and stir in spring onion, basil and beansprouts. Serve immediately.
