Super tasty and flavorful! I doubled curry, only used one can of coconut and an extra cup chicken broth. Added chopped kale, zucchini and cherry tomatoes. Used leftover bbq ribs as the pork

Hot, hot, hot! Beware the 3 T of sambal oelek in the paste. This makes it very spicy! My husband and I can handle quite a bit of heat, but I found the heat overpowered the flavour...couldn’t really taste any of the other spices because my lips were burning! If I made it again, I would halve the amount of sambal.
