  • 2 pork tenderloins (about 1½ lbs.)
  • 1/4 cup olive oil
  • 4 avocados (peeled, pitted and cut in half)
  • 4 limes (cut in half)
  • 2 tsp. olive oil
  • 3 cloves garlic (chopped)
  • 1 lime
  • 1/4 cup fresh lime juice
  • 2 tsp. cumin
  • 1 tsp. chili powder
  • 1 tsp. red pepper flakes
  • 1/2 tsp. sea salt

    Directions

    1. Combine all ingredients in 9" x 13" pan.
    2. Add pork to Marinade and turn to coat. Refrigerate 4 hours, up to overnight.
    3. Remove pork from refrigerator and let sit at room temperature for 30 minutes.
