- 2 Tbsp. olive oil
- 1 kg pork shoulder (rolled)
- 1/4 tsp. salt
- 1/4 tsp. pepper
- 2 carrots (peeled. One left whole, the other cut into matchsticks)
- 1 onion (cut in half, no need to remove the skin)
- 1 stick celery (broken in half)
- 3 cloves garlic (chopped in half, no need to peel)
- 1 ginger (thumb-sized piece of, roughly chopped, no need to peel)
- 2 liters chicken stock
- 2 Tbsp. mirin
- 3 Tbsp. soy sauce
- 2 Tbsp. gochujang (Paste this can be found on the speciality aisle of larger supermarkets)
- 1 red chilli (roughly sliced, remove the seeds if you don’t like it too hot)
- 4 large eggs
- 200 grams ramen noodles (dried)
- 1 leek (sliced)
- 100 grams baby spinach leaves (packed)
- 1 tsp. sesame seeds
- 1 tsp. black sesame seeds
- 1 bunch scallions (spring onions, chopped)
- 1 tsp. chilli flakes

Great. We used soba noodles instead of ramen noodles. Also added shitake mushrooms as a topping, we cooked it at the same time with the leeks. We had lots of vegetable stock on hand so used it instead, but I think it would have been much better if we hadn’t. It was still delicious though.

Lovely! I made a smaller portion with a pork chop and shirataki noodles. The only thing id change is make sure the spinach doesn’t mix with the broth if you don’t want it to taste like spinach :)

This was a fairly simple recipe that turned out quite well. Although described as Ramen it's missing thay velvety broth but I'd still recommend it for a cold day.
