- 2 cups sweet potatoes (small cubed roasted chipotle, medium sweet potatoes)
- 1 Tbsp. chipotle seasoning (store bought or see notes)
- 2 cups brussels sprout (roasted, halves)
- 2 Tbsp. coconut oil (divided)
- 4 cups kale (sweet, superfood mix, or baby kale)
- 1 1/3 cups edamame (shelled, optional)
- 1/2 watermelon radish (thinly sliced, optional)
- 4 Tbsp. hemp seeds
- 1/2 cup hummus (Purple Probiotic Ginger Beet, recipe below)
- 1/2 cup sauce (Peanut Ginger, recipe below)
- 15.5 oz. chickpeas (rinsed and drained)
- 1/3 cup gingered (Farmhouse, Fermented Beets plus a couple tablespoons of liquid as needed)
- 2 cloves garlic (grated)
- 2 Tbsp. Tahini (Soom Tahini)
- 2 Tbsp. extra virgin olive oil
- 1 lemon (juice of)
- sea salt (or pink Himalayan salt)
- fresh ground pepper
- 1/2 cup peanut butter (or sub almond butter, Georgia Grinders)
- 1 Tbsp. tamari
- 1 Tbsp. coconut palm sugar
- 1/2 tsp. ginger (fresh grated)
- 1/2 lime (juiced)
- hot water (to thin)
