- 6 green onions (thinly sliced)
- 1 cup mini peppers (cored assorted, or regular colored bell peppers)
- 1/4 cup fresh cilantro (minced)
- 1/2 cup dry roasted peanuts (chopped)
- peanut sauce
- 1/2 cup creamy peanut butter
- 1/4 cup soy sauce
- 1/3 cup warm water
- 2 Tbsp. fresh ginger (peeled & minced)
- 2 cloves garlic (fresh, minced)
- 2 Tbsp. rice wine vinegar
- 2 Tbsp. fresh lime juice
- 1 Tbsp. sesame oil
- 3 Tbsp. olive oil
- 1 Tbsp. honey
- 1/2 tsp. red pepper flakes
- 1 Tbsp. Sriracha hot sauce (reduce for milder flavor, if desired)

My wife and I liked this recipe. The kids (2 & 4) had mixed reactions. It was pretty easy to prepare. I could have used less sauce, but still liked it.

Ok I think there is an idea here but there is something missing in the sauce or it’s the rice wine that I am not favoring. I will try again with some adjustments and maybe add some greens
