- 1 onion (small, or 3/4 medium, cut into chunks)
- 6 cloves garlic (smashed)
- 2 inches ginger (cut into chunks)
- 3 Tbsp. mirin (Japanese sweet rice wine)
- 2 Tbsp. vegetable oil
- 1 Tbsp. toasted sesame oil
- 1 Tbsp. dashi (granules)
- 2 tsp. sesame paste (if Asian brands are unavailable, use tahini)
- 4 large free range eggs
- 3 Tbsp. soy sauce
- 2 Tbsp. dark brown sugar
- 1 Tbsp. water
- 2 shallots (small, finely minced)
- 2 cloves garlic (finely minced)
- 1/2 tsp. sesame seeds
- 1/4 cup vegetable oil
- 2 1/2 Tbsp. spice (Japanese seven, shichimi togarashi)
- 7.7 oz. ground pork (fatty)
- 1 Tbsp. toasted sesame oil
- 1/4 tsp. ground black pepper (freshly)
- 1 Tbsp. dried shitake mushrooms
- 2 cups chicken stock (unsalted)
- 1 cup soy milk (unsweetened, unflavoured, Asian brands preferred but if unavailable, American brands is ok, too)
- 1/2 cup miso paste (spicy)
- 2 ramen noodles (servings of fresh)
- 4 Tbsp. scallions (finely diced)
- 1 sheet nori (/Japanese sushi seaweed, cut into rectangular sheets)
