  • 1 tablespoon oil
  • 2 onions (peeled and finely chopped)
  • 1 fresh root ginger (walnut-sized piece, peeled and finely chopped)
  • 2 cloves garlic (peeled and finely chopped)
  • 500 grams red lentils
  • 1/2 teaspoon curry powder (plus extra for sprinkling)
  • 1/2 teaspoon ground cumin
  • 1/4 teaspoon ground cardamom
  • 2.5 liters vegetable stock
  • 8 tablespoons greek yogurt
  • 15 grams fresh flat leaf parsley (chopped)

    Directions

    1. Heat the oil in a saucepan and sauté the onions, ginger and garlic for 2 mins. Add the lentils, curry powder, cumin and cardamom and sauté for 1 min. Pour in the stock and bring to a boil. Simmer over a low heat for 15 mins, stirring frequently. Season with salt and black pepper.
    2. Ladle into bowls, top each with 1 tbsp yogurt and swirl. Sprinkle with parsley and curry powder.
