- 1 cup kimchi (roughly diced, plus 2 tbsp kimchi liquid, optional)
- 1 cup mushrooms (I used Shiitake Mushroom, diced into bite size pieces)
- 2 Tbsp. canola oil
- 1/2 cup yellow onion (small diced)
- 1/4 tsp. red pepper flakes (optional, for garnish)
- 1/4 tsp. salt (adjust per taste)
- 2 egg
- 1 tsp. soy sauce
- 1 tsp. chili paste (Sambal, optional but recommended)
- 3 Tbsp. green onion (1-2 scallions, small diced)
- 3 Tbsp. cilantro (fine chopped)
