- 1 red onion (finely sliced)
- 2 cloves garlic (finely sliced)
- 300 grams minced pork
- 2 chorizo (flavoured pork sausages, or replace with 100g extra mince)
- 2 tsp. paprika (ground hot)
- 1 tsp. ground cumin
- dried chillies (sprinkle of crushed)
- 100 grams frozen peas
- 50 grams chorizo (cured sausage, thinly sliced)
- oregano leaves (chopped, to garnish, optional)
- red chilli (chopped, to garnish, optional)
- 4 large eggs
- 4 tortilla wraps (I used wholemeal ones today)
- baby spinach leaves (Several handfuls of washed)
