- 100 grams crab meat (freshly picked White)
- 50 grams peeled prawns (fresh, roughly chopped)
- 50 grams sweetcorn (cooked, Nibs)
- 1 free range egg (medium sized, fresh)
- 2 stems lemon grass (peeled and finely chopped)
- 2 chilli peppers (small, hot, finely diced)
- 1 piece ginger (Preserved, finely grated)
- 1 Tbsp. fish sauce
- 2 limes (fresh)
- 1/2 tsp. ground coriander
- 1/4 tsp. freshly ground black pepper
- 1 bunch fresh coriander (finely chopped)
- 1 knob butter oil (for frying)
- 1 small carrot (peeled and very finely diced)
- 1 banana shallot (peeled and very finely diced)
- 1 stick celery (very finely diced)
- 1 sweet red pepper (very finely diced)
- 2 chilli peppers (small hot, finely diced)
- 2 stems lemon grass (finely chopped)
- 2 cloves garlic (peeled and crushed to a pulp)
- 1 piece ginger (Preserved, finely grated)
- 3 Tbsp. fish sauce
- 2 Tbsp. palm sugar (or soft Brown Sugar)
- 2 limes (fresh)
- 1 Tbsp. fresh coriander (finely chopped)
