- 1 clove garlic (minced)
- 1 cup flour
- 1/4 tsp. baking powder
- 1/2 tsp. salt
- 1 tsp. ground coriander
- 1/2 tsp. ground cumin
- 1 egg (lightly beaten)
- 1 tsp. lemon juice
- 1/2 cup water
- 2 cups corn kernels (see steps for cutting corn from a cob cut from 3 large cobs, or frozen corn, defrost and drain first)
- 4 scallions (large, or green onions, finely sliced, about half a cup)
- 1/4 cup chopped cilantro
- peanut oil (or olive oil for frying)
