- 1 tsp. chilli powder
- 1 tsp. cumin (powdered)
- 1/4 tsp. salt
- 2 chicken breasts (skinless, deboned, and in strips)
- 3 cups lettuce (assorted, in bite-sized pieces)
- 1 Tbsp. olive oil
- 1 lime
- 1 clove garlic, finely chopped
- salt
- ground black pepper
- 2 Tbsp. roasted peanuts

Directions
- Mix the chili, cumin, and salt. Cover the chicken with this mixture and marinate for 15 minutes in the refrigerator.
- Cook the chicken in a hot skillet. Set aside.
- Place the lettuce in a salad bowl.
- Mix the olive oil, lime juice and zest, and garlic. Season with salt and pepper to taste. Dress the lettuce with this vinaigrette.
- Add the chicken, sprinkle the peanuts on top, and serve.
