  • 2 boneless, skinless chicken breasts (cut into 1 Inch cubes)
  • 1 onion (Medium, diced)
  • 2 cloves garlic (minced)
  • 2 green chilies (seeded and diced very small)
  • 1 1/2 tsp. cumin
  • 1 tsp. Mexican oregano
  • 1/2 tsp. smoked paprika
  • 1/4 tsp. cayenne pepper
  • 2 carrots
  • 1 red pepper (I used 1 small blue jay pepper and ½ sweet banana pepper, from our farmers market)
  • 4 cups small red potatoes (quartered, or any potato cut into 1 inch cubes)
  • 1 bunch kale
  • 4 cups chicken stock
  • 2 cans white kidney beans (or canellini)
  • 1 cup heavy cream (or half and half)
  • salt
  • pepper
