- 2 boneless, skinless chicken breasts (cut into 1 Inch cubes)
- 1 onion (Medium, diced)
- 2 cloves garlic (minced)
- 2 green chilies (seeded and diced very small)
- 1 1/2 tsp. cumin
- 1 tsp. Mexican oregano
- 1/2 tsp. smoked paprika
- 1/4 tsp. cayenne pepper
- 2 carrots
- 1 red pepper (I used 1 small blue jay pepper and ½ sweet banana pepper, from our farmers market)
- 4 cups small red potatoes (quartered, or any potato cut into 1 inch cubes)
- 1 bunch kale
- 4 cups chicken stock
- 2 cans white kidney beans (or canellini)
- 1 cup heavy cream (or half and half)
