- 3 shallots (thinly sliced)

- 8 oz. tomato sauce (good quality)
- 1/4 tsp. red pepper flakes (depending on your tastes)
- 2 bay leaves
- 1/2 tsp. kosher salt
- 3 black pepper (grinds of)
- 3/4 cup water (divided)
- 1/2 lemon
- chopped parsley (for garnish, optional)
- 2 cups long-grain white rice (cooked, you want the rice to be sticky -- NOT converted rice.)

Turned out great I followed the recipe completely and it was delicious. If only I used fresh Mahi Mahi instead of frozen. I also recommend adding some quinoa to the rice.

This was good for something different. We probably wouldn't make it again though. If you love Caribbean food definitely give this a try. It was very easy and flavorful. We used the 1/2 tsp of pepper flakes and it was a nice comfortable heat.
