- 6 cups butternut squash (from about a 2 lb squash, peeled, seeds removed and cut into 1-inch pieces)
- 1 cup lentils (either French green or black lentils)
- 3 Tbsp. extra-virgin olive oil (divided)
- 1 tsp. ground cumin
- 1 tsp. smoked paprika
- 1 dash crushed red pepper flakes
- 1 tsp. salt
- 4 cups baby spinach (see note)
- 1 cup soft goat cheese (crumbled)
- 1/4 cup mint leaves (thinly sliced)
- 1/4 cup walnuts (halves.)
- 1 Tbsp. red wine vinegar
