- 1 red bell pepper
- 1 can black beans (1 can = 400gr before draining)
- 250 mL vegetable broth (1 cup = 250ml)
- 1/4 cup coriander (/cilantro)
- 1 1/2 tsp. cumin
- 1/4 tsp. red pepper flakes (be careful not to make it too hot!!)
- 1 Tbsp. balsamic vinegar
- 1/2 avocado
- 2 tortillas
- 1 slice cheddar (only for those who are not vegan)
