- 3 tsp. Sriracha (hot chile sauce, 2 tsp for less spice)
- 2 tsp. soy sauce (I use low sodium)
- 1 1/2 tsp. Thai red curry paste
- 1 piece fresh ginger (peeled)
- 3 oz. wide rice noodles (uncooked, rice-flour noodles)
- 1 Tbsp. fresh lime juice
- 1/4 cup chopped fresh mint (cilantro and green onion for garnish, optional)

The soup was simply delicious, hard to stop eating.. The only change was we deleted the siracha from the recipe so
everyone could eat at their own desired level of heat., added mushrooms, then sprouts at the end for a bit of crunch.
