  • 3/4 cup red lentils (soaked in water for 10 mins)
  • 1 teaspoon ground turmeric
  • 7 ounces carrots (peeled and diced)
  • 14 ounces tomatoes (diced)
  • 1 onion (medium, finely diced)
  • 1 tablespoon fresh ginger (chopped)
  • 1 teaspoon Garam Masala
  • 1/2 teaspoon ground coriander

  • fenugreek (Pinch of ground)
  • 1 pinch ground cloves

    Directions

    1. Bring 3 cups water to a boil in a large saucepan. Drain the lentils and add to the pan along with the turmeric and carrots. Reduce the heat to low; cover and simmer for 15 mins, adding more water if necessary.
    2. Add the tomatoes, onion, ginger and spices. Simmer for 15 mins. Season with salt and ladle into bowls.
