- 300 grams potatoes (diced)
- 300 grams red onions (diced)
- 1 handful spinach leaves (trimmed and chopped)
- 1 red chilli (small , shredded)
- 1 bunch coriander (cilantro, chopped)
- 1 tsp. fine sea salt
- mango chutney (Spicy, to serve)
- 1 lime (cut into wedges, to serve)
- 100 grams Greek yoghurt (/3½oz, scant ½ cup thick)
- 2 Tbsp. coconut milk
- 1/2 tsp. ground cumin
- 1/4 cucumber (halved, deseeded and finely diced)
- 1 bunch mint (finely chopped)
