- 4 Tbsp. groundnut (or other flavourless oil)
- 1 inch fresh root ginger (2.5 cm, piece, peeled and grated)
- 1 coconut (fresh, milk from)
- 1/2 coconut (grated flesh, fresh, weighing about 3 oz/75 g)
- 3 oz. creamed coconut (75 g, grated)

- black pepper (freshly milled)
- 1 tsp. cumin seeds (rounded)
- 1 tsp. coriander seeds (rounded)
- 6 cardamom pods (crushed)
- 1 tsp. fenugreek (rounded, ground)
- 1 tsp. ground turmeric (rounded)
- 8 oz. dried chickpeas (225 g, pre-soaked, drained and soaking liquid reserved)
- 3 onions (medium, peeled)
- 1 clove garlic (fat)
- 1/2 coconut (grated flesh, fresh, reserved from the curry)
- 4 chillies (bird eye, deseeded)
- 3 shallots (peeled)
- 0.5 oz. coriander (fresh, leaves, 10 g)
- 1 Tbsp. fresh mint leaves
- 1 green chilli (medium-sized, deseeded)
- 1/2 inch fresh root ginger (1 cm, piece, peeled)
- 1/2 tsp. cumin seeds
- 3 tomatoes (medium-sized ripe but firm, skinned, deseeded and thinly sliced)
- 1 red onion (medium, peeled and sliced into thin half moons)
- 1 coriander leaves (dessertspoon, chopped fresh)
