- 1 carrot (chopped)
- 1/2 onion (chopped)
- 500 grams ground beef
- salt
- ground black pepper
- 1 zucchini (chopped)
- 1 poblano chili (in strips)
- 2 Tbsp. mole sauce (paste)
- 1/2 cup tomato puree
- 1/3 cup water

Directions
- In a saucepan, heat the oil. Add the carrot and onion. When the onion is transparent add the ground beef and stir with a wooden spoon.
- When the meat changes color, season with salt and pepper. Add the zucchini and poblano chili and continue to cook for 3 minutes.
- Make a hole in the middle of the meat and add the mole paste. Stir it in with the juices of the meat. Add the tomato puree and the water and continue to stir.
- Cover the saucepan, turn the heat to low, and cook for 15 minutes. Taste and add salt if needed.
