Description
This variation of a classic just begs to be served with a good cream cheese frosting. Serve it warm with a bit of butter melted into each slice.

- 240 grams flour (sifted)
- 200 grams brown sugar
- 3 large eggs
- 400 grams carrot (grated)
- 65 grams walnuts (chopped)
- 65 grams hazelnuts (chopped)
- 1 orange
- 120 mL sunflower oil
- 2 tsp. baking powder
- 1 tsp. baking soda
- 1 tsp. ground cinnamon
- 1 tsp. vanilla
- 1/2 tsp. ground cloves
- 1/2 tsp. ground white pepper

Directions
- Preheat the oven to 180 Celsius.
- Beat the eggs and sugar together for 10 minutes with an electric mixer. Add the oil, orange juice, and vanilla little by little while continuing to mix.
- Mix in the flour, cinnamon, cloves, white pepper, baking soda, baking powder, and orange rind. When combined, add the carrot, walnuts, and hazelnuts and mix well.
- Pour the batter into a greased and floured baking pan. Bake for 60 minutes, until an inserted toothpick comes out clean.
- Cool for 5 minutes in the pan until turning out onto a baking rack to cool.
