- 180 grams soft brown sugar (light)
- 3 medium eggs (free range)
- 450 grams butternut squash (roasted, cut in half and bake in a medium oven for 30 minutes or until the flesh is soft, then scoop out and discard the skin and mash the insides with a fork)
- 300 grams wholemeal flour
- 1 1/2 bicarbonate of soda (level teaspoons)
- 1 1/2 baking powder (level teaspoons)
- 2 mixed spice (rounded teaspoons)
- 1/2 tsp. fine sea salt
