- 200 grams butter (softened)
- 150 grams caster sugar
- 225 grams self raising flour (sifted)
- 80 mL milk
- 3 large eggs
- 1 tsp. canela
- 1/2 tsp. mixed spice
- 5 apples (medium, 750g – I used Granny Smiths)
- 100 mL boiling water (and allowed to cool, I did mine in half rum, half boiling water)
- 25 grams butter (extra)
- 1/3 cup soft brown sugar
- 375 grams caster sugar (white)
- 1 Tbsp. golden syrup
- 100 mL water
- 6 egg whites
- 600 grams unsalted butter (soften, in 2cm-ish chunks)
- 2 caramel sauce (quantities of Nigella salted, totally cooled – use it from the fridge ideally)
