  • 1/2 acorn squash (a medium, roasted and then peeled, I followed these directions from The Hungry Artist – yes, save those seeds and roast them, too!)
  • 1/4 cup milk (I used light soymilk…I think any milk will do)
  • 1/2 cup brown sugar (packed)
  • 1/2 cup unsweetened applesauce
  • 3 tablespoons creamy peanut butter
  • 1 1/4 cups whole wheat flour
  • 1/2 teaspoon baking powder
  • 1/4 teaspoon baking soda
  • 1 1/2 teaspoons cinnamon
  • 1/2 teaspoon nutmeg
  • 1/4 teaspoon clove
  • 1/8 teaspoon salt
  • 1 cup dried cranberries (or any dried fruit you like…cranberries are really nice though)
