Sparkling Wine with Berries

  • 5 1/4 ounces frozen strawberries (thawed for 10 mins, sliced)
  • 5 1/4 ounces frozen raspberries
  • 2 tablespoons granulated sugar
  • 1 cinnamon stick
  • 1/3 cup brandy (raspberry)
  • 750 milliliters dry white wine (sparkling, chilled)
  • mint sprigs (fresh, to garnish)

    Directions

    1. Combine fruit. Toss with sugar and cinnamon stick. Cover with plastic wrap and let macerate for 30 mins, until sugar dissolves.
    2. Remove cinnamon stick then purée. Add raspberry brandy. Distribute 1-2 tbsp berry mixture between champagne flutes and top with sparkling wine. Garnish with mint and serve.
