- 6 boiled eggs (hard-, peeled and halved lengthwise, I recommend making one or two extra in case you have a couple that don’t peel cleanly)
- 6 oz. tuna in olive oil (tuna drained and flaked)
- 2 Tbsp. capers (rinsed and drained)
- 1 Tbsp. lemon juice
- 1 shallot (small or half a large, minced, about 1 heaping Tbs)
- 2 Tbsp. mayonnaise
- salt
- freshly ground pepper
- pepper (piquillo or roasted, cut into thin strips for garnish, optional)
- 1 handful chopped parsley
