A deliciously simple meal originally designed for back packing trips, but good enough for a quick meal at home too!
Ingredients

- 6 tortillas
- 1 cup salsa
- 1 1/2 cups rice (uncooked)
- 1 onion (small, diced)
- 1 cup gouda cheese (cut in small pieces or shredded)
- 2 Tbsp. olive oil
- 2 cups chicken broth

Directions
- Saute onion in olive oil over medium high heat
- Add chicken broth, salsa, and rice. Cover and reduce heat. Simmer for about 25 minutes until rice is done.
- Heat up tortillas
- Add rice to tortillas and mix with cheese so it melts
